One of the commitments I’ve made for Lent as part of eating ethically is to attempt to not waste food by being aware of expiration dates and of produce going bad. For the past six months I’ve had a hard time eating a whole loaf of bread before it gets stale and/or moldy. Besides eating sandwiches for every meal, I was hoping for a solution to this problem. I tried freezing half of a loaf for later, but my attempt was not very successful (if you have tips for freezing bread, please share!) This week I was finally able to come up with a solution to having extra bread: yummy homemade croutons! I tried to make some cheesy bread but it turned out too crispy/crunchy, the texture of a good crouton. So with the bread I had left I decided to cut it up into cubes and see if croutons resulted. Here’s what I came up with:
Preheat the oven to 350 and cut the bread into cubes. Put it into a tupperware container and drizzle with melted butter or olive oil so the bread is lightly coated. Add italian herbs/spices, garlic salt and parmesan cheese. Then put the lid on the container and shake it up. Once the cubes are coated evenly dump them on a cookie sheet and stick in the oven for about 10 minutes. Now you have croutons for snacking and salads. Hooray for extending the life of bread!
